IOGA -- The town of Levin wasn't much of anything before the turn of the 20th century. But in 1902, Stephen "Sword" Lee, a logging pioneer, bought the land and changed the name to Tioga.



Soon thereafter, it became a bustling sawmill community. The rail system bisected the town, and the Lee Logging Company's commissary, built in 1892, was the epicenter.

The only thing that remains of the once-thriving timber industry is the shell of the commissary, situated next to the train tracks.

But with the help of the Tioga Historical Society, the Secretary of State's Office and Jules Babineaux, a museum designer from Scott, the old commissary building soon will be open to the public as the Tioga Heritage Park and Museum.

Eight years ago, the Tioga Historical Society took a special interest in the commissary and began work to restore the wood frame building to its former glory.

"This old store was like a mini Walmart," said Jimmie Nelle Lewis, president of the historical society. "To go to town (Alexandria) you got on the train, and that was a major trip."

The commissary sold everything from shoes and livestock feed to meats and vegetables. It was home to the post office and train depot, as well as the general gathering place for townsfolk and old-fashioned politicking.

"I was raised right here on Second Street, and mother would send us with a little grocery list," Lewis said. "I was here during the hey-day of the old store."

The building had dilapidated over the years, and Lewis said driving past the store and seeing it in a state of such disrepair was a call to action for her.

"I'd past it, and I would just cringe," she said.

Melvin Bowie, a lifelong Tioga resident and member of the Historical Society, said he knew the building had historical value, and, with a bit of research, learned it already had been placed on the National Registry of Historic Places.

After more than a year of clean-up and renovation, the commissary is ready for exhibits -- the first of which will be a steam engine that is currently on display in Baton Rouge.

Babineaux said his plans for the museum are consistent with the history of Tioga specifically and Central Louisiana, in general.

"It's basically a cultural museum for the area," he said. "We'll start off talking about the area of Tioga -- the geography, geology and military history, as well as the Civil War, with Bailey's Dam and the Red River Campaign (in Pineville)."

The museum will consist of dozens of interpretive panels, as well as large displays depicting the importance of the timber industry and Tioga's railroad history. Babineaux also has secured a collection of more than 100 Civil War-era model ships from a museum in Shreveport.

Though the museum is in the early stages, the community response has been positive.

"The community has been phenomenal," Lewis said. "They've come out to work, and we've gotten donations."

Bowie said he's rarely been on site when someone hasn't stopped by either out of curiosity or the desire to help.

"This place just brings back memories," he said.

The prolific architectural firm of William E. and Arthur A. Fisher designed the three-part vertical block type structure with its striking white terra cotta accents. The property is associated with the Historic Resources of Downtown Denver Multiple Property Submission.

Beet the HEAT

The last of the beets were in our CSA basket, four to go with my four I already had. When I roasted my chicken at 10pm to avoid the heat and electric bills, I roasted all the beets, save one for beet kvass, with a couple of heads of garlic in olive oil. Some of the roasted beets, I froze for later. The rest, I made a few great chilled beet recipes to "beet the heat."

Ginger Glazed Beets
2-3 oven roasted, peeled and slivered beets
1/4 cup marmalade or jelly (i used some mint jalapeno jelly)
Pat of butter
Teaspoon of grated or chopped ginger
1 tablespoon balsamic vinegar
Melt jelly with butter in a saucepan; Add ginger and beets. Cook, stirring constantly, over medium heat until glazed with the sauce. Add vinegar to deglaze the pan. Serve warm or cold. I also topped with local Roquefort cheese and hazelnuts.

Beetroot and Kim Chee Chilled Vivid Soup (I don’t think I could ever recreate it, it was a great way to use up things around the house)
Sauteed already roasted beets with butter and onions, added chicken broth (2 tablespoons of homemade concentrate) and beet kvass juice. Cooked for a few minutes. Add purple kim chee cabbage with had cumin and mustard seeds. Used the immersion blended to make a thick soup. Chilled in the fridge. Made a white sauce with peeled and seeded cucumbers, garlic and onions in a blender with sour cream and some yogurt.

Made above white sauce, added a dash of beet kvass, mixed to make this bright fushia color, added gone to flower cilantro and basil. My husband hates cumcumber and ate both of these with gusto.

Beet Kvass, fermented beets… use vinegar if you don’t have it

Cook until all the vegetables are tender, chill and serve with sour cream and a dash of beet kvass or vinegar.

Beet Kvass
large raw organic beetroot, peeled and chopped up coarsely.
1/4 cup whey made fresh from raw milk into cheese (i have A LOT of whey right now)
1 teaspoon of sea salt
filtered water

Place beetroot, whey and salt in a glass container (I used a cleaned out Nutella jar) Add filtered water to fill the container. Stir well and cover securely. Keep at room temperature for at least 2 days before transferring to refrigerator (mine is still on my countertop)

Drink a glass morning and night for health benefits. Beet kvass is great for a digestive aid, blood tonic, promotes regularity, alkalizes the blood, and a good treatment for kidney stones and other ailments. You can use it in place of vinegar for some vivid salad dressings. I used the beet chunks afterward the ferment to make my borscht soup with a splash of this beet elixir.

We use so many glasses for water around our house that I feel like I'm constantly washing dishes all day long. I thought it would fun to personalize one glass per family member with their own design, and they could use one glass a day instead of 6 new cups a day. Drinking 8 glasses of water a day from your own kitty glass is fun. Washing dishes all day is not.

Each child drew a design on their own, along with their name, and followed directions. We haven't used these for gift ideas, but it would be worth a try.

You will need: Plain clear or colored glasses, white vinegar, contact paper, carbon paper, craft knife, spoon, 1/4-inch adnesive vinyl letters, fabric paint pen, rubber gloves, etching cream, paintbrush.

1-Clean glasses with hot water. Rinse with white vinegar. Be careful not to leave any fingerprints. Draw pattern or design. Cut a piece of contact paper 1 inch larger than design.
2- Use carbon paper to trace the pattern onto the contact paper. Cut out shapes using a craft knife. Set the cut out portions aside and peel the backing from the remaining piece of contact paper and place it on the glass. Burnish with spoon.
3-Paint on etching cream (love this stuff!) wearing rubber gloves. Allow to set and then rinse.
4-Peel off the contact paper, paint, letters. Wash and use! Simple.

All the renovation shows on TV go on and on about stainless steel appliances. I'm sorry. I think stainless steel is just ugly unless you're talking about cutlery. It gets dirty too easily and is a pain in the patooty to clean. I'm also into being green and that means not throwing something away unless it's no longer repairable.
